Headband Refashion


I had an old white headband from way back when and I couldn't bring myself to wear it any-more or even give it to the girls because it looked really shabby. I decided to recover it and so give it a new lease of life. I found some lovely sheer ribbon in my stash and got to work with my hot glue gun.

First, I covered each end of the headband so I could wrap the main piece and not have to worry about making sure the ends were properly covered at the same time. I just folded a piece of ribbon over each end and hot glued it in place. I held it in place with a peg on each end until completely dry.

To do the main piece, simply glue one end of the ribbon to the end of the headband at an angle, wrap the ribbon all around, overlapping as you wrap, and hot glue on the inside only to keep the front looking pretty. When you get to the other end, just cut the ribbon at an angle again, wrap it around as neatly as you can and hot glue it down.


Leave it to completely dry and there you go. Brand new headband in hardly any time at all!

Red pepper, tomato and spinach pasta sauce


I made this yummy pasta dish for my girls this afternoon and it was so tasty and even better, it took minimal effort. My kind of meal!

Red pepper, tomato and spinach pasta sauce (Serves 2-3)

1 x red onion, peeled and diced
1 x red pepper, diced
3 x tomatoes, diced
2 x sun-dried tomatoes, finely diced
handful spinach (or other leafy green)

Heat some olive or coconut oil in a pan and add the onion and pepper. Stir to coat and leave to simmer for about 5 mins. Add the fresh and sun-dried tomatoes, along with some freshly cracked black pepper and a pinch of mixed herbs. Stir well and leave to cook for a further 10 mins, until the vegetables have all softened. Add the spinach, and 1 tbsp water. Cover and leave to steam for 5 mins until the spinach has wilted. Blend with a stick blender and serve over freshly cooked pasta.


Absolutely delicious with a good sprinkling of grated cheese :)

Healthy Christmas Lunchbox Fillers

Christmas food is undoubtedly something we spend about a whole year looking forward to. The turkey, cranberry sauce, pigs in blankets, mince pies... We love it.

However, our traditional Christmas binge is not exactly the healthiest of pursuits, and although you may want to spread the Christmas cheer by packing your child’s lunchboxes full of festive treats, a mince pie a day may not be the best route forward.

If your child is already over excited about the festive season, here are four Christmas lunchbox fillers that will help keep up the festive cheer, and make you happy that they’re eating something that’s good for them.


Turkey Roll-Ups


Switch traditional sandwiches for some yummy festive wraps and inject a bit of health and colour into their lunches.

Take a wholemeal wrap, and sprinkle lettuce and raw greens on it – spinach is great for young minds. Put on a thin layer of lean, cooked turkey and scatter over a handful of fresh cranberries. Fold in the bottom edge, and then roll up. Wrap tightly in a single layer of foil, so your little one can rip in and then unwrap as they eat to avoid losing filling!


Festive Potato Salad


Potato salad is a great alternative to sandwiches and can be made in a large batch in advance. Just remember to supply them with a fork!

Cook and cool new potatoes. Chop into bitesize chunks, and pop into a bowl with some cubed ham, a handful of fresh cranberries, and finely sliced spring onions. Add a little ground pepper, some chopped fresh parsley (optional), a squeeze of fresh lemon juice and a little olive oil – or use low fat mayonnaise. Toss together, and then pop onto a bed of raw spinach or salad in a Tupperware container.


Christmas Fruit Salad


There are so many yummy pudding options around at this time of year, so why not blend these flavours into a healthy fruit salad for your child’s lunchbox?

Peel and cube a dessert apple and pear, pop in a bowl, and add in the juice of ½ orange to stop the fruit going brown. Peel a clementine or satsuma, remove pith if your little one is fussy, and separate into segments. Add to the bowl, along with some fresh or dried cranberries, some sultanas, and a sprinkle of cinnamon. Stir, and dish into small Tupperware containers.

A top tip that would earn you teacher rewards: to keep salads cool, simply freeze a juice carton and use as an ice pack in their lunchbox!


Holiday Trail Mix


Trail mix should be only served in small portions as it’s calorie-heavy, but it’s excellent as brain food at lunch or as a mid-morning snack for student motivation. Make sure to check out your child’s school’s rules on nuts before preparing this, as some ban them due to allergies.

Mix equal amounts of almonds, cashews, pecans, pumpkin seeds, dried cranberries, soft-dried apricots and dried apple. Add a little cinnamon, mix up, and then put portions into small pots or ziplock bags.

Baggy tshirt to knotted vest top refashion


I had this tshirt that was a couple of sizes too big for me. I bought it when I first had Naomie and I was breastfeeding and it fit pretty well. A little baggy but it still looked good. Since I have stopped breastfeeding and gotten back to my pre-pregnancy weight (and boob size), the tshirt just looked ridiculously big on me.

I decided to cut the sleeves off and make a vest top out of it. I was originally going to take the sides in and keep it as a long top but I decided to go the easy route and just gathered it around my waist and secured with a knot. Easy, took me 10 minutes and it looks very cute! I like to wear it with either a black vest top or a colourful vest top underneath to give a pop of colour. I think it turned out really nice :)

Guacamole Recipe


I love this recipe. Guacamole is so delicious, so good for you, so versatile and most importantly, so easy to make!

All you need is one medium, very ripe avocado, 2 tbsps lemon juice, some salt and pepper and a pinch of mixed herbs. Mash the avocado into a bowl, add the other ingredients and mix in well.

Serve it on top of a jacket potato, in a sandwich or wrap, on top of a spicy chilli, just eat it plain or use it as a dip for tortillas.


Absolutely delicious!

Green Hummus Recipe


A while ago I posted a recipe for Red Pepper Hummus. I love that recipe but thought I would like to try a version made with leafy greens. I am always trying to find new ways to get leafy greens into my kids diet. So far I have had good results with blending them into a lentil soup but I needed more ways. I can't just give them lentil soup every night, as much as they might want me to :P

I decided to see whether hummus with added leafy greens would actually be palatable. Most leafy greens are quite strong tasting but then so is hummus so I was hoping that the taste of the leafy greens would be masked.

I used cavolo nero in mine since that is what I received in my veg box this week. You could use any leafy green you wanted, such as kale, spinach, romaine lettuce etc.


Green Hummus Recipe


1 cup chickpeas, cooked (or about ½ cup dry)
1 cup cavolo nero (or other leafy green), roughly chopped
2 cloves garlic, minced
1 tbsp tahini (optional)
1 tbsp hemp oil
3-5 tbsps lemon juice
1 ½ tsps cumin
salt and pepper
½ cup cold water

First of all, you will need to cook your chickpeas if cooking from dry. You will need to soak them overnight and then cook as per packet instructions, usually for 10 mins on rapid boil then an hour on a simmer. Mix all ingredients except water in a food processor. Blitz together, adding water as necessary to form a smooth(ish) paste.


Serve with vegetable sticks or a warm pitta bread. Yum!

I might not be around this next week because me and the kids are going visiting my Auntie Sandra. I'll have to see how easy it is to get online while I'm there so I might be around but probably not. See you when I get back :)

Crochet Coffee Cup Cozy


I like to crochet whilst watching TV and the other day I found myself making flannel after flannel just to keep my mind busy while I was catching up on my soaps. I needed something quick and simple and useful aswell since I now have more flannels than any one house could ever need :P

I decided to try my hand at making a coffee cup cozy. I have had eczema on my hands since I was younger and the skin on my hands has gotten really thin after years of using steroid creams on them. I always find that cups of coffee burn my hands so I can't hold them when they are first made. It's hard enough carrying a 3 year old, 2 year old in her pushchair and all the things that two young children need, never mind juggling a cup of coffee that's burning your hands aswell. Not fun!

Crochet Coffee Cup Cozy

You will need:

DK yarn
4mm crochet hook
3 buttons, sized to fit buttonholes

Main:

1. ch12, sc in 2nd ch from hook and across (11)
2. ch1, turn, sc in 1st st, ch2, sk1st, sc in next 3sts, ch2, sk1st, sc in next 3sts, ch2, sk1st, sc in last st
3. ch1, turn, sc in 1st st, sc in chsp, sc in next 3sts, sc in chsp, sc in next 3sts, sc in chsp, sc in last st
4-40. ch1, turn, sc across (11)

You should end up with a long rectangle that fits around your cup and three buttonholes at the very start of the rectangle.

Straps:

41. ch1, turn, sc in 3sts (3)
42-48. ch1, sc across, bind off
49. with wrong side of st facing and working at the other end, join yarn in the third st, ch1, sc in 3sts (3)
50-56. ch1, sc across, bind off
57. locate the middle three stitches, join yarn in the third st, ch1, sc in 3sts (3)
58-64. ch1, sc across, bind off

You should now have three straps on your cozy for the three buttonholes you worked earlier. Check the fit around your cup and make sure the cozy fits snugly. Shorten the straps a little if necessary. I found this size was good for a medium sized cup.

Weave in all ends and add a button on the end of each strap.

Flower: Using contrasting yarn, I made a simple flower as shown in this tutorial, and stitched it on to the cozy.
