Meal Plan Week 2
Friday - Fish Pie (Make some mashed potatoes, I usually use about 450g for 2 adults and 2 toddlers. Poach off 400g white fish / oily fish mix in some seasoned milk, I tend to flake it while it's still in the milk then drain and keep the milk for the sauce. Make some cheese sauce by melting 50g butter in a saucepan, adding 50g plain flour and cooking off, then gradually mixing in 500ml milk to form a white sauce. Leave to cook until it thickens then add 50g cheese. In an ovenproof dish, layer fish, frozen peas, cheese sauce then mashed potatoes, sprinkle with some extra grated cheese then cook at 200C/GM6 for 30mins until lightly browned)
Saturday - Chicken Tikka Masala (Mix together 1tsp minced ginger, 1tsp minced garlic, 1/2tsp cumin, 1/2tsp coriander powder, 1/4tsp turmeric, 1/4tsp cayenne pepper, 1/2tsp garam masala and 1/2tbsp paprika in a bowl. Heat some oil in a frying pan then add some onion, fry until golden then add the spice mix, cook off for 1min. Add 1tsp tomato puree and cook off for 1min. Add 5 x tomatoes chopped up in food processor. Bring to a gentle simmer, add 2 cubed chicken thighs and cook for 15mins until cooked through. Add 5tbsps natural yoghurt and heat through. Serve with rice and naan bread)
Sunday - We usually go out to my MIL's house on Sunday so a lot of the time we have a roast dinner there.
Monday - Tuna Pasta Salad (I usually make a massive bowl of this since me and Paul love it so much. We snack on it all night! I use 4 handfuls pasta, cooked and cooled, 1/2 cucumber diced, 4 x tomatoes, diced, 1/2 x yellow pepper, diced, salad cream to taste. Mix it all up in a large bowl and add seasoning to taste)
Tuesday - Peasant Stew and rice
Wednesday - Leek and Potato Soup
Thursday - We have started going to Paul's nan's house on a Thursday and she tends to make something for us.
