Red pepper hummus - Recipe



Red Pepper Hummus Recipe (serves 3)

1 cup dried chickpeas (or 1 ½ cup tinned)
2 x red bell peppers (about 1 ¾ cup)
2 cloves garlic, crushed
1 tbsp tahini (optional)
1 tbsp olive oil
1 tbsp lemon juice
1 ½ tsps cumin
salt and pepper
½ cup cold water

First of all, you will need to cook your chickpeas. I cook mine from dry in my pressure cooker but if you don't have a pressure cooker you will have to soak them overnight and then cook as per packet instructions. Grill the red peppers until blackened then cover with tin foil and leave to steam for 15mins. Remove skins. Mix all ingredients except water in a food processor. Blitz together, adding water as necessary to form a smooth(ish) paste. I served ours with toasted (gluten free) pitta bread slices, celery sticks, romaine lettuce, yellow pepper strips and cucumber strips. Delish!
