Red pepper, tomato and spinach pasta sauce
I made this yummy pasta dish for my girls this afternoon and it was so tasty and even better, it took minimal effort. My kind of meal!
Red pepper, tomato and spinach pasta sauce (Serves 2-3)
1 x red onion, peeled and diced
1 x red pepper, diced
3 x tomatoes, diced
2 x sun-dried tomatoes, finely diced
handful spinach (or other leafy green)
Heat some olive or coconut oil in a pan and add the onion and pepper. Stir to coat and leave to simmer for about 5 mins. Add the fresh and sun-dried tomatoes, along with some freshly cracked black pepper and a pinch of mixed herbs. Stir well and leave to cook for a further 10 mins, until the vegetables have all softened. Add the spinach, and 1 tbsp water. Cover and leave to steam for 5 mins until the spinach has wilted. Blend with a stick blender and serve over freshly cooked pasta.
Absolutely delicious with a good sprinkling of grated cheese :)
